Italian Sausage Sandwich

The Best Italian Sausage Sandwich....EVER!!!

I came up with this idea the day before we were leaving to go on a camping trip. We had been shopping and packing and preparing all day for this trip and we were hungry! I needed to make dinner for my family and it needed to be fast and simple. 

This is no ordinary sandwich.  This sandwich is the love child between a calzone and a meatball sub (my husband's words). This sandwich is so flavorful and satisfying.  My family raves about this sandwich and asks for me to make it ALL THE TIME!!

This will feed a family of 5.  You can easily adjust the serving size as needed.

Here is what you'll need:

  • 1 large onion
  • 2 cloves garlic
  • 2 bell peppers (any color)  I used red and green.
  • 1 Anaheim chili
  • 5ozs mushrooms
  • 1 Tablespoon butter
  • 2 Tablespoons of olive oil
Put butter and oil in pan and sliced veggies.  Salt and pepper to taste.  Cook low and slow for 30-45 mins.

This is my quick marinara sauce.  This is so simple and healthy.  If you make it yourself, you know the quality of ingredients are better.

  • 1 24 oz can of crushed tomatoes
  • onion and garlic to taste
  • 1 Tablespoon of Italian seasonings
  • salt and pepper to taste
  • 1 teaspoon olive oil 
Place oil in pan and sweat onion and garlic (about 2 mins). Then add rest of ingredients and simmer for 30 mins.  Keep stirring or it will stick to bottom of pot.

Now to make the sandwich!!
  • 5 hot Italian sausages (use your favorite brand)
  • 5 hoagie rolls or your favorite bread
  • mozzarella cheese
Brown sausage in pan with 2 teaspoons of olive oil. Cook thoroughly until thermometer reads 160 degrees.

Slice bread, add sausage, add peppers and onion mixture, scoop on marinara sauce then sprinkle cheese on top.....lots of cheese!!

Remove from oven and enjoy!

Chocolate Crackle Cookies

Recently I had friends over and we got to talking about usual!  We were saying how it can be a challenge at times to get creative with dinner or we get in food ruts. I was explaining how I make dessert or breakfast  for dinner sometimes when I am low on groceries and need to go shopping. kids love when I do that!!  We started to share recipes and ideas with each other and this cookie recipe became the hot topic.  

Soon after everyone had left, I was on the search for this recipe. Once I realized I had all the ingredients in my house already, I had to make it!  I love the idea of short cut recipes.  Sometimes we need a little help and cake mixes are a great way to get the help you need with home made results!

I cherish my time with friends.  I love how I feel after spending time with a group of wonderful ladies....energized, encouraged and renewed. 
Fellowship is not an event. It should be part of our life as a Christ-follower. I hope this recipe honors my friends as they eat these warm, soft and gooey cookies!

In a large bowl with an electric mixer, add the cream cheese, butter, egg, vanilla extract and then add cake mix. Beat together for 2 mins.

This is after 1 min.  You can still see the cream cheese and butter.

This after 2 mins.  It is perfectly blended and creamy.

Put in fridge for 2 hours. Then use a scoop and roll dough into balls, then dip in powdered sugar. Preheat oven to 350 degrees. Place on an ungreased cookie sheet, 2 inches apart. Bake 12-15 mins.

Let cookies cool for 5 mins.  This is hard but they are so gooey and they need time to set up.

Now you can eat and enjoy!

Connie's Chocolate Crackle Cookies
  • 1 (8-ounce) package cream cheese, softened
  • 1 stick butter, softened
  • 1 egg
  • 1 1/2 teaspoons vanilla extract
  • 1 (18-ounce) box moist chocolate cake mix
  • Powdered sugar for dusting

*You can also add 3/4 c of peanut butter to the batter* 

If you love peanut butter as much as I do, you are always looking for ways to use it.  I had to try this recipe with PB as well and it was GOOD!!

Change is Necessary and So Is Bug Spray: DIY Natural Bug Killer

A lot of thought has gone into what I would name my blog.  It was important to me to find a few words that could describe where I am in my life right now and not just spiritually but literally.  Where am I ...I thought?  Geographically speaking.  I mean I know what my address is and I know I live in the Ozarks and I know I am not in California anymore, but I still cannot pin point where I am. 
Soooooo..... I asked friends and boy did I get responses!  I received text messages, FB comments, private messages and phone calls.  Everyone seemed to know where I am, except for me! 

I'm a city girl by every definition of the meaning and here I am in this country-ish life. I am learning so much about myself and I will continue to learn more as I live this new life.  Life changes all the time and we change with it (or do we)??

Genesis 12:1-3 Now the LORD said to Abram, “Go from your country and your kindred and your father’s house to the land that I will show you.  And I will make of you a great nation, and I will bless you and make your name great, so that you will be a blessing. I will bless those who bless you, and him who dishonors you I will curse, and in you all the families of the earth shall be blessed.”

There are times in our life when change is required.  Change is necessary.  When we repent, we are changing the way we think and we are realizing God's way is better than our own. How we embrace it depends on how we except God's plan for our lives.  I am fully embracing the new life I have and give God all the glory for everything.  

However, one thing I have not fully embraced are the BUGS!!  I didn't like them in California and I don't like them here.  They are bigger and there are more of them.  I have tried many different home remedies to kill them and have even bought chemicals from the store and I finally found one that works.  It is easy and inexpensive and safe and the bonus is it smells great (to us) not to those nasty little creatures!

Here it is...the best bug killer:
  • peppermint oil
  • cinnamon oil
  • water
  • spray bottle
  1. Fill the spray bottle with water (I used 22 ounce).
  2. Pour a 1/3 of each oil into spray bottle.
  3. That's it!
