Oreo Cookie Cupcakes

My kids really enjoy Oreo cookie anything.  I rarely buy Oreos, so it is a big deal to them when I do.
Oreo cookie cupcakes is one of their favorite ways to eat cupcakes.  This time we were baking with a purpose.  In the same week we had a close friend of ours lose their sister to cancer, another friend's husband had surgery and a friend moved away, so we decided to make something special to show our love.  It is a small thing in comparison.  However, bringing the cupcakes over to the friend who lost his sister gave us a chance to talk and more importantly just to listen.  This small gesture of an idea that my kids had brought a little happiness to others.

Oreo Cookie Cupcakes
  • 1 box chocolate pudding mix
  • 1/2 cup sour cream
  • Oreo cookie of your choice (I used chocolate creme filled Oreos).
Directions:
  1. Preheat oven to 350 degrees.
  2. Line a muffin pan with paper liners.
  3. Sift together the flour, baking powder, baking soda, cocoa, pudding mix and salt. Set aside.
  4. In a large bowl, cream together the butter and sugar until light and fluffy. Add sour cream. Add the eggs one at a time, stir in the vanilla.
  5. Add the flour mixture alternately with the milk; beat well.
  6. Place one Oreo on bottom of cupcake liner.  Fill the muffin cups 3/4 full.
  7. Bake for 15  minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean.
  8. Frost with your favorite frosting (or try mine) when cool.

  1. Gorgeous! Who doesn't like oreo cookies? Delicious and beautiful and I love that you chose vanilla frosting for the top. It gives contrast to the chocolate and also adds to the Oreo flavor!
